Jay Oyarzabal

Jay has extensive hospitality experience: he trained as a chef in a three-AA-rosette hotel and has run his own restaurants in Bude and Ilfracombe. Jay joined The Collective at Woolsery at its inception and has worked as a chef at The Farmers Arms, and was responsible for the opening of Woolsery Fish & Chips. In his current role as Duty Manager, he works alongside Food and Beverage Manager Harry Brooks to ensure the smooth running of the restaurant.

Jay lived in Woolsery for eight years prior to joining the team so is well connected to the community – he’s even Leader of the local Scout group. Jay is also a keen forager, which benefits the bar’s off-piste drink’s list. He says: ‘I’ve built up a lot of knowledge from my foraging which has helped make the bar’s cocktails and cordials so distinctive’
