Ian cut his culinary teeth at some of the UK’s best country house hotels, as well as in kitchens in Ireland, Switzerland and France. As a result, he’s worked alongside many culinary legends such as Michael Caines MBE.

As Executive Chef at The Collective at Woolsery, Ian has what so many chefs can only dream of: a progressive farm on his kitchen doorstep from which to source ultra-fresh and uber-seasonal ingredients.

‘I get to work with incredible produce from our Birch Farm every day,’ he says. ‘I feel very lucky to be part of a project that’s building a better future, and to have the opportunity to produce creative and exciting new recipes in this incredible environment.’
